The chicken salad is one of the first recipes I prepared without following recipes and doses ... I prepared it as it came with the ingredients I had on hand at home; since I first prepared it, this recipe has become my workhorse in the kitchen and I am very proud of it: P
The chicken salad is a recipe that I start preparing as soon as summer arrives and every time there is some lunch and everyone brings something to me they ask for this and the cheeesecake and I am happy to prepare it: D Also among the recipes summer, this is the favorite of my mom and my love and it is to them that I dedicate it;)
How to make chicken salad
Boil the potatoes, then peel them while still hot and cut them into cubes.
Roast the chicken on a griddle, cover it with a lid and cook for about 40 minutes.
Once ready, let the chicken cool then remove the skin, remove all the pulp, cut into strips and add salt.
Julienne the carrots and wash the rocket then arrange them on a serving dish.
Now place the potatoes all around and the chicken strips on the rocket and carrot bed.
Drain the corn and add it to the chicken salad and finally add the spoonfuls of mayonnaise.
Place in the fridge covered with cling film, then serve the chicken salad very cold.
