Do you remember the baked zucchini? Well, at your suggestion I tried to do something similar with aubergines, I had some leftover egg whites in the fridge waiting to be used for something new… and here's today's recipe: crispy baked eggplant! They are really delicious and very simple to prepare, in no time you will have an appetizer, or if you prefer a side dish, tasty and low in calories. My holidays are going great but next week I will be back at work to follow some projects that are close to my heart, I greet you and wish you a good weekend I leave you this recipe of crispy baked aubergines hoping you like it ;-)
How to make crispy baked aubergines
Wash the aubergines and then cut them into sticks
Prepare 2 dishes, one with beaten egg whites with salt and pepper and the other with breadcrumbs
Pass the aubergines first in the egg whites and then in the breadcrumbs, trying to make the breading adhere well to the vegetables
Put the sticks of sauce on a baking sheet covered with parchment paper and cover with a drizzle of oil.
Bake in the oven at 180 ° for about 30 minutes, turning the vegetables halfway through cooking, then serve your crispy baked aubergines: P
