If you are tired of preparing the classic rice salad, here is a more exotic variation, a first course summer, light and fresh, topped with pineapple, shrimp, peas and pecans. The recipe for preparing the exotic rice salad is quick and easy, a particular dish that you can serve directly in the cups made from pineapple halves. In this way you will amaze your guests by bringing an out of the ordinary dish to the table;)
How to make exotic rice salad
Rinse the rice under running water several times until the water becomes transparent.
Cook the basmati rice in a saucepan with plenty of salted water for the time indicated on the package.
Once cooked, drain, and put the rice to cool
Sauté the boiled shrimp and peas in a pan with a tablespoon of oil. Add salt, then let it cool
Cut a pineapple in half lengthwise and empty the pulp, leaving a border of a few millimeters in each half shell.
Cut the pineapple pulp into cubes
Put the rice in a bowl, add the pineapple, peas and shrimps, season with the lime juice and a spoonful of oil
Then add a handful of pecans and mix
Put the exotic rice salad in the fridge for half an hour and serve :)
