The risotto with melon and rocket is really original and delicious, perfect if you like the combination of cantaloupe melon with salty. Last year I had already tried a similar pairing preparing a rice salad with melon and I liked it a lot so I had no difficulty in preparing a risotto with similar ingredients this year;)
The recipe for this risotto with melon it is also perfect for vegetarians, but if you want an even more "tasty" version, you can add speck cubes to each dish; P

How to make risotto with melon and rocket
Cut the melon into cubes and set aside.
Clean the onion, chop it and let it dry gently for 5-10 minutes in a saucepan with oil and butter.
Also add the melon and let it mix with the rest for a few minutes.
Add the rice, toast for a couple of minutes over high heat, then blend with the white wine.
Cover with the broth and cook the rice over medium-low heat, adding more broth if necessary.
Once ready, turn off the heat, season with salt and pepper, stir in the chopped fontina and add the chopped rocket.
Your risotto with melon and rocket is ready, let it rest for a couple of minutes and then serve it.
