Red Velvet Cupcakes

Red velvet cupcakes recipe of 30-12-2013 [Updated on 27-08-2018]

The red velvet cupcakes are the single-serving version of the delicious and spectacular cake that I posted some time ago: easy to prepare, nice to bring to the table and delicious. With these bright red cupcakes I conclude the sweets of Monday edition 2013. It is said that red brings good luck because it is the symbol of strength, success and fire ... and with these red velvet cupcakes I wish you everything beautiful for the new year upon us. Although I am recovering from my annual flu, I still feel a half stink: P I'm still eating in white and going into the kitchen to prepare something, we don't even talk about it ... so I wait for the new year, kisses those who pass by here: *

How to make red velvet cupcakes

In a bowl, mix the flour with cocoa and baking powder.

Work the softened butter with the sugar, the egg and the vanilla essence with an electric whisk.

Dissolve the red dye in the buttermilk.

Pour half the buttermilk into the butter mixture while continuing to mix, then add a pinch of salt.

Now pour in the flour mixture and the other half of the buttermilk.

Whip until a homogeneous mixture is obtained.

Pour the mixture into the muffin molds, filling them up to half of their height, then bake at 180 ° C for 20 minutes in a preheated static oven.

Once ready, let it cool.

In the meantime, prepare the philadelphia frosting.
Whip the Philadelphia cheese with the icing sugar and a teaspoon of vanilla essence.

Whip the cream in a separate bowl, once whipped add it to the cream cheese. Mix with a spatula with a movement from bottom to top until a homogeneous cream is obtained.

Let's go now to decorate the cupcakes.
Put the cream in a syringe and fill your red velvet cupcakes.

Decorate with a little crumb of dough taken from some cupcakes then serve.
