I tasted the risotto with citrus and shrimp last month at a wedding, the taste of orange and lemon, combined with that of shellfish, I liked it so much that I had to do it at the first opportunity. So, I unleashed the memory of the taste tasted and I prepared my shrimp risotto, a first course with a fresh, delicate and citrusy taste, one of those recipes that leave their mark for their excellent success;) If you have not yet thought about first course to prepare this Sunday and you like the genre, you could think about it. How to make citrus and shrimp risotto
Finely chop the onion and sauté it in a saucepan with half the butter.
Squeeze orange and lemon to get the juice.
Add the rice to the onion and toast it.
Deglaze with the prosecco, then add the citrus juice.
Then cover with the broth and cook.
As it is absorbed, if necessary, add more broth.
Clean the prawns and sauté them quickly in a pan with garlic and a drizzle of oil.
Then lift them from the sauce and add them to the rice, along with the grated citrus peel.
Stir in the remaining butter and a little Parmesan.
Then serve the citrus and shrimp risotto on plates garnished with a little grated orange peel.
