The recipe for lentil meatballs was born to dispose of the boiled lentils that I had cooked in abundance for Elisa, I added a boiled potato that I had left over from the day before, a little pecorino to give a spicier flavor and here are some vegetarian meatballs and different from the usual;) In reality I did not believe that these lentil meatballs were so tasty nor that everyone appreciated them, and instead they are all finished, if you do not want to fry, you can also prepare them in the oven by cooking them for about twenty minutes to 180 degrees so as to be even healthier food. How to make lentil balls

Boil the potato in boiling water, peel it, cut it into pieces and put it in a bowl with the boiled lentils

Mix then add the egg and the softened bread

Add breadcrumbs, pecorino cheese, parsley, salt and pepper and knead until a homogeneous mixture is obtained

Make meatballs with the dough and put them in the fridge to harden for 20 minutes

Roll the lentil balls in breadcrumbs and fry them in a pan with oil

Cook the meatballs until they are nice brown

Lift the meatballs, place them on a plate with absorbent paper then serve them with a side of salad
