Muffins with zucchini and cherry tomatoes are a delicious appetizer to eat and also to watch. How to make tomato muffins
Combine the dry ingredients (flour, parmesan and yeast) in a bowl.
In another bowl, mix together the liquid ingredients (eggs, oil and milk), with the addition of salt and pepper.
Peel the courgettes, cut them into cubes and sauté them in a pan with the oil for 5-10 minutes (they must be well browned but not overcooked).
Quickly mix dry and liquid ingredients, then add the courgettes and mix quickly. Then divide the mixture into buttered cups, filling them no more than 2/3.
Wash the cherry tomatoes and place one in the center of each muffin, pressing lightly.
Bake at 190 ° C in a preheated convection oven and cook for 15-20 minutes.
Once ready, let your tomato muffins cool before serving.
