Cookie dough is a basic recipe used above all to make delicious rolls and sweet rolls. With this recipe I arrived at a base to use perfect for any filling, to be used as a jolli both if you want to use a chocolate filling or one with cream and fruit for example;) The recipe is very simple, the only care you need to have it is to check the cooking times well, approximately it takes 10 minutes but each oven is a story in itself, so do the toothpick test and check that the surface of the cake is well browned;) Last advice ... How to make cookie dough
Separate the egg yolks from the whites and whip the latter until stiff peaks.
Separately, whip the egg yolks with the sugar until they become light and fluffy.
Add the flour, the starch, a pinch of baking soda and the lemon.
Whip until a homogeneous mixture is obtained.
Now add the egg whites previously whipped until stiff.
And with a spatula, gently incorporate them into the dough.
Spread parchment paper on a baking sheet, pour the mixture and level as much as possible.
Bake the biscuit dough at 180 ° C in a preheated oven and bake for 10-12 minutes.
On a pastry board, place a sheet of parchment paper and turn over the biscuit dough, then gently remove the one used for cooking.
Cover the dough with another sheet of parchment paper and roll it while it is still hot.
Let it cool, then gently open and remove the parchment paper.
Your biscuit dough is ready, now you can fill it as you like!
