Birthday cake with ness cream

For the countertop: we separate the egg white from the yolk, we put two tablespoons of cold water and a pinch of salt in the egg white and we start mixing until the egg white becomes hard. Gradually add 3/4 of the amount of sugar and mix until the sugar melts and becomes egg white like a meringue. Put the 2 tablespoons of oil and the remaining sugar in the yolks and mix until the yolks become whitish in color. Pour over the egg whites and mix for about 3 minutes. We mix the flour with the baking powder and we incorporate it in the composition with a palette, mixing it lightly, from the bottom up until we incorporate it well. Put the composition in a tray lined with baking paper, then put the tray in the oven heated to 180 degrees for 25-30 minutes. We also do the toothpick test. Remove the worktop and let it cool

For the cream: we break whole eggs, we mix them well adding the sugar gradually and the vanilla sugar. We break them in a pot because we will boil the cream on steam. When it starts to thicken, so a sour cream, add the ness and let it boil for another 5 minutes and the ness dissolves well. Put it aside and let it cool. Put the Rama in a bowl and mix it, then gradually add a tablespoon of cream until you finish it. Mix well until the cream becomes frothy.

For the syrup: caramelize the sugar and dissolve it with water, then let it cool.

Then we begin assembling: cut the countertop in half, then each half in two, thus obtaining four pieces. We put the first piece on the tray, then we syrup, we put the cream, then again the countertop, syrup, cream, until we finish. We decorate the cake with the remaining cream and chocolate flakes, then we put roses as decoration. Let cool for 1-2 hours then serve.
