The cornettone with sausages and broccoli is an absolutely fantastic rustic! For the uninitiated, friarielli are typical Neapolitan vegetables that go perfectly with sausages, which is why in sandwiches, in cottages or even on pizza, you will always find the combination of these two ingredients. To combine the sausages and broccoli in this tasty cornettone, you must first devote yourself to its dough which will be quick and easy with the Thermomix. How to make the cornettone with sausages and broccoli with the thermomix
Put yeast and water in the jug, and work for 10 sec., Speed. 3.
Add egg and oil and mix again for 20 sec., Speed 3.
Then add 500 g of flour and mix for 1-2 min., Vel 6.
Finally add the salt and the remaining flour and work for 4-5 min., Vel. Ear.
Transfer the dough into a bowl, cover with a cloth and let it rise for about 2 hours or until it has doubled in volume.
In the meantime, clean the broccoli (remove the stalks and the hardest leaves), wash them well, put them in a large pan, cover with a lid and cook for about ten minutes.
Then drain them and, in the same pan, fry the garlic and chilli with abundant oil, then add the broccoli, add salt and cook for another ten minutes.
In another pan, cook the sausages with the addition of a glass of water.
When they are well cooked, cut them into slices and add them to the pan with the broccoli.
When the dough has doubled, roll it out on a floured pastry board in a rectangular sheet.
Sprinkle the surface with the topping: first sausage and broccoli, then the thinly sliced provolone, finally the grated Parmesan.
Roll up tightly, seal the ends well and give the roll the shape of a large croissant.
Place the cornettone on the greased oven tray and bake in a preheated oven at 220 ° C.
Cook for 10-15 minutes, then lower the temperature to 180 ° C and cook for another 15-20 minutes or until golden brown.
