Today's recipe is a savory pie with onions and feta that I prepared in mini portions so as to make them even more appetizing;) I caramelized the red onions so as to make them sweet and make them marry even better with the strong flavor of the cheese feta cheese and I covered everything with a mixture of eggs and cream, the mini quiche with onions and feta went like hot cakes. How to make onion and feta quiche
Clean the onions and cut them into small pieces, then put them in a saucepan with a drizzle of oil and cook over low heat for about 20 minutes, adding a few tablespoons of water if necessary.
Stir from time to time until they are golden brown
In a bowl, mix the eggs with the cream, Parmesan, salt and pepper.
Grease the quiche molds, line them with the puff pastry and prick with the tines of a fork.
Lay a layer of onions on the base of the tartlets. Then add a little crumbled feta
Cover with the egg mixture
Bake the onion and feta quiche in a preheated oven at 180 degrees and bake for 15/20 minutes or until the cakes are swollen and golden.
Allow to cool then remove from molds and serve
