Peel a squash, grate it and squeeze the juice. Cut the slices not too thick, to fry them lightly. Pour the oil into a pan and fry the potatoes for 2-3 minutes on both sides. The eggs are broken and beaten in a plate, add salt, pepper and paprika, to taste. The resulting composition is poured into the pan, over the potatoes, and on top garnish with slices of salami and cheese. Leave to fry, over low heat, until the egg hardens and the cheese melts. When ready, remove from the heat.
I cut the omelet into 4 pieces, so that it could be put more easily on plates, with a wooden spatula. The omelet can also be served with pickles, if you like.
Cook the omelet over low heat because, if it burns, it will not taste good.
Instead of salami, you can use sausages, mussels, kaiser, etc.
If you don't have cheese, use any kind of cheese.
You can also use paprika if you like.

I have been making this recipe for many years. I just put in the pan and fry the sausages, salami. . I beat several eggs and in the eggs I put mushrooms, donuts in vinegar, pieces of olive, green parsley, the cheese I have, pepper, delicacy, cucumbers in vinegar, then I pour everything over the french fries and sausages.
