With Easter coming up, I'm looking forward to the sentimental conceit of dying, hiding, and hunting eggs for my 14-month-old son, who won't remember any of it. In our frenzy of egg-dying, I expect we'll lose track of which eggs are hard-boiled and which are raw. Which is a recipe for trouble.

Tip: Just place the egg on a hard surface, like the counter, and spin it like a top. As it's spinning, grab it with your fingers ever-so-briefly and immediately let go. If it keeps spinning, it's raw. If it stops dead, it's boiled.

Is it right that Foul eggs float? Steaks should be only flipped once? Coffee should be stored in the freezer? Kitchen lore are passed from generations to generations, and funny thing is we accept it without even questioning once. With advancement in technology some of these lore are considered as myths and some call them true. So today, I will unveil the actual truth behind the egg floating test myth. Not for the sake of writing but the truth for you guys I have performed egg float test.
How Long Can You Store Eggs? Longer Than You Think . . .
It happens to the best of us. You buy "fresh" eggs, only to find out that your expensive, organic, cage-free, brown eggs are past their sell-by date. But don't trash them just yet, because you can probably still use them! Raw, shelled eggs typically last three weeks after their sell-by date when properly refrigerated and four to five weeks after their packing date when properly refrigerated.
Boiling or cracking eggs shortens their shelf life, with boiled eggs lasting about a week. This is because eggshells, which are highly porous, have a thin coating of mineral oil that seals and protects the egg. Boiling them washes away this protective sealing, leaving the shell susceptible to bacterial contamination. Once you peel these eggs, you should eat them the same day. After cracking them, raw, whole eggs have to be eaten within two days. Egg whites stored on their own can last up to four days, but yolks have to be used within two days.
If your eggs are reaching the end of their shelf life and you just want to really be sure, you can always check the freshness with a water test. Just take a cold glass or bowl of water, and gently place the egg into the cup. If the egg sinks, it's fresh and safe to eat. If it floats, then the egg has spoiled.
If you need to significantly extend their shelf life, consider freezing your eggs. Frozen whole eggs, yolks, and whites can be frozen for up to a year. But be aware that egg yolks thicken when frozen. To slow this process, beat in either 1/8 teaspoon salt or 1 1/2 teaspoons sugar for every four yolks. While you may encounter some slight changes in texture and preparation, they will still be edible.

Inspector of Gadgets: The Eggstractor
New column alert! Inspector of Gadgets is a new series that will investigate, critique, and experiment with some of the most idiosyncratic single-use kitchen utensils on the market (or found on eBay). The goal is to figure out why on earth these items are, or were ever, “a thing.” Which ones will genuinely surprise us, and which ones will leave us wishing we hadn’t blown $9.99?
To kick off this column, I decided to start by trying out the Eggstractor , a device that exists to make your hard-boiled-egg-peeling chores a dream. The Eggstractor uses the magic of compressed air to crap eggs out of its bottom, completely shell-free. Or it’s supposed to. In theory, this tool will make your life easier if you eat 400 eggs per day, or if you’re allergic to hard-boiled eggs that aren’t as smooth as Michael Bublé’s voice.
As you can see from the photo above, it’s only composed of two parts. One is the three-legged base, and the other is the accordion-like top that you’re supposed to violently press down in order for the Eggstractor to shit out the egg. You have no idea how excited I was for this package to arrive from whoever was selling it on eBay.
When I received it, the outer packaging that it was shipped in was covered in a disturbing amount of hair. After staring at the hair for much longer than I should have, trying to determine its provenance, I came to the conclusion that it was either dog hair or short human hair. While this has nothing to do with the device itself (the Eggstractor inside was pristine), this really felt like a detail I needed to share with you. And now I have.
As the box says, “The Magic of the patented Eggstractor is Pure Science!” Based off the strategically placed Capital Letters, I was already convinced. This thing was about to save humanity, using Pure Science.
There’s a section of an unshelled hard-boiled egg that is just a gap of air between the egg and the shell. The Eggstractor box also uses Capital Letters to describe it as the Air Cell. When you squash down the bellows part of the device, the air compression is supposed to force the air from that tiny little pocket between the cooked egg and the shell, separating the two. That’s when the egg gets violently blown out of the little hole on the bottom, between the three legs of the stand. It’s suggested that you use large or extra-large eggs, so I opted for the extra-large eggs, aka the only eggs I had in the refrigerator.
And, handily, there are a bunch of suggested recipes included with the instructions, such as the classic dish “Hard Cooked Eggs With Apples” (which is exactly what it sounds like) and omelets (which do not require the use of an Eggstractor).
I then noticed this little curious little cone on the base, thinking it was part of some mechanism to keep the bellow in place while you performed CPR-like compressions on the thing, but it’s actually there for a practical reason.
You’re supposed to tap the Air Cell side of the egg on it, puncturing the shell. The instructions also call this side of the egg the “small end,” which is kind of an endearing description. You are also supposed to give the “large end” a few cracks. This was already veering toward being about as much work as it takes to peel a hard-boiled egg by hand.
The final part of the instructions did indicate that this might not work right out of the gate, at least until I got the hang of it.
“The Eggstactor [sic] is fun for the whole family. It may take you a couple tries to get the hang of it, so if the first time your eggs don’t come out perfectly take a breather and give it another try. We guarantee you’ll get it right, just make sure you follow the Eggstructions Eggsactly! If you follow the Eggstructions Eggsactly you will be an Eggspert Eggstractor!”

How to test eggs in water
If you want to test whether an egg is still fresh, it is best to do the water test . Put the egg in a glass filled with water. If the egg is fresh, it stays on the bottom. Eggs that are about a week old have the blunt end raised. When an egg is around two weeks old, it is in the water.
From the age of four weeks, the egg swims without contact with the bottom. If the egg floats, stop eating it. The reason for the slowly rising egg is the air chamber in the egg, which gets bigger over time.

“If the eggs are offered loose – that is, without outer packaging – you won’t even find out the best before date,” explains nutrition expert Geraldine Huisinga from the Consumer Center. It is difficult for the consumer to tell whether the colorful Easter eggs are really fresh. These tricks help:
- If the egg shows extensive discoloration, it could be because the shell was defective. Then you shouldn’t eat it anymore.
- Another trick to judging the freshness of an egg is the location of the yolk. If it is in the middle, the egg is fresh. With older eggs, the air chamber grows and the egg yolk moves more and more towards the shell.
- If an egg smells rotten, the thing is clear: Put it in the bin!
How to ensure your eggs stay fresh
Buy eggs as fresh as possible and use them as soon as possible
• Store eggs in the refrigerator. The reason: Salmonella practically does not multiply at temperatures below 6 ° C. At room temperature, however, it multiplies explosively. Subsequent cooling cannot reverse this

How to Test if an Egg is Fresh
I eat a ton of eggs. They’re the ultimate breakfast (or supper!) food and most of my baking recipes call for at least one egg. So, of course, we go through eggs pretty quick. Sometimes they’re farm eggs from my friend’s hens and other times I purchase them from the store.
But regardless as to how many eggs I eat, there’s always at least one instance where I find an egg and don’t know how old it is. Maybe it was stuffed in the back of the fridge or perhaps it was found at the back of the coop nest under some bedding. Either way, there is a super quick and easy way to test how long it’s been sitting there without having to crack it and risk that horrible rotten egg smell.
- Find a bowl deep enough to totally submerge an egg
- Fill the bowl with at least four inches of room temperature water
- Carefully set the questionable egg in the water.
- If it sinks it’s fine to eat
- If it slightly tips up with one end on the bottom, then it’s still good to eat, but needs to be used asap
- If it floats then the egg is no good and needs to be thrown out
Anytime I’ve had an egg in the fridge for a while or I get eggs from friends, I always do this method to check and see which ones need to be used first. Then we do a huge batch of scrambled eggs or shipwreck!
How to test if an egg is hard boiled
While we’re on the topic of checking eggs, I also have quick method for telling if an egg has been hard boiled or not. While I don’t personally care for hard boiled eggs all that much, my mother does and we always had hard boiled eggs in the fridge when I was growing up. I can’t tell you how many times I was not paying attention and accidentally cracked a hard boiled egg while baking. Oops!
Finally, my father showed me a quick method to test before you break that shell. You set the egg on its side on a flat surface like a table or counter top and spin it. If the egg spins like a top, it’s cooked. If it does not, then it’s raw. Piece of cake!
Keto Egg Fast Recipes
This is my favorite way to sneak in an egg within 30 minutes of waking up. Just add an egg yolk (or two, or three) before blending your creamy, delicious keto coffee. Don’t worry — it won’t taste eggy.
Feel free to cook up the egg whites and eat them with some cheese or save them for the next time you make an omelet or egg wrap.
Simply follow the directions on how to make the wrap, add feta (or your favorite cheeses) as the filling, drizzle with extra virgin olive oil or melted butter, and skip the other ingredients. You’ll find the wrap to be somewhere between an omelet and a crepe, with a unique texture that you won’t experience with other egg fast recipes.
If you’d like to follow the keto egg fast rules strictly, omit the spinach and heavy cream. Keep in mind, however, that heavy cream is very similar to butter, so you can be a bit more lenient with this ingredient.
Remember to consume one tablespoon of butter or oil for every scrambled egg. You can also add in some extra cheese if you’d like, but don’t exceed 1 ounce per egg. If this doesn’t sound appealing try our keto egg bites.
One of the simplest ways to follow the egg fast is by using hard-boiled eggs as the base of your meal. Drizzle with one tablespoon of olive oil or melted butter per egg and add salt to taste.

Simple Egg Salad
Though most egg salad recipes call for a bunch of ingredients that don’t fit the rules, it is still possible to make it yourself after stripping it down to its essential components: hard-boiled eggs, an egg yolk, and oil.

Once you’d made the mayo, chop up the hard-boiled eggs and mix the two together. Add salt, pepper, and shredded cheese for flavor if desired.
Cheese Chips with Egg Fast Mayo
You can also use the 2-ingredient mayo from the previous recipe as a dip for cheese chips. Even without using the bacon that these cheese chips call for, the end result will still be satisfying and crispy.
Use the leftover egg white from your mayo to make scrambled eggs or egg wraps later.
If you’d rather have your eggs fried, sunny side up, or over easy, give the cheese basket section of this recipe a try. While your cheese baskets are baking, cook your eggs in butter (while using a ramekin to get a perfectly sized egg).
Once the baskets are done, lay a cooked egg on each basket. To follow the egg fast rules precisely, use roughly a quarter cup of shredded cheese for each basket and one tablespoon of oil or butter for each egg.
These are essentially omelet wraps with melty cheese oozing out. Simply omit the sausage and bacon and use whatever keto cheeses you’d like as the filling.
Since each roll up is made of two eggs, use up to 2 ounces of cheese and two tablespoons of butter or oil per roll up.
To ensure your carton of eggs stays as fresh as possible, make sure you're storing it in the coldest part of your fridge—that's usually going to be the bottom shelves, because cold air sinks, and toward the back of the fridge. Many people like to store their eggs on the inside of the fridge's door—sometimes there's even a little egg compartment in there—but that's actually the warmest part of the fridge, since it gets the most exposure to the kitchen's heat. Go deep, instead!
