Last night I was leafing through one of my cookbooks and my boyfriend set his eyes on this recipe and fell in love with it, forcing me to prepare it for him: D It's a bit unusual, but good. Pay attention to the choice of beer: it must be clear and without bitter aftertaste.
How to make Reginette with speck and potatoes
Peel the potato, wash it and cut it into cubes. Cut the speck (or pancetta) into strips.
Brown the chopped onion and speck in a pan.
Then add the diced potatoes, salt and pepper and cook for 5 minutes, stirring occasionally with a wooden spoon.
Add the beer, bring to a boil and cook over high heat for 10 minutes.
Meanwhile, cook the pasta in abundant salted water, drain and pour it into the pan with the sauce.
Cook for a few moments over medium heat and then serve the bacon and potatoes reginette on plates.
